Super Easy French Breakfast Muffins

So I have been debating whether or not to post any recipes on this blog because I post a lot about living with an eating disorder. I want to emphasize that eating disorders are much less about actual food. Food is just the tool being used to cope with things. However, loving cooking is part of my life, and it is something that really helps me in my recovery. Food group during treatment was always one of my favorites. I have been cooking a bit more recently, and it has been a good reminder for me that there are parts of food that I actually really love.

Yesterday, I made these super easy muffins that my family has been making for years. They are so yummy, and if you like cinnamon sugar donuts, then you will probably really like these. The ingredients are ones you probably already have in your kitchen. I am not a food blogger, so please be patient with me while I try to figure out how to write these types of posts!

IMG_7567.jpgAs you can see from the picture above this recipe has been around for a while! My mom’s recipe basically just calls for throwing everything together in a big bowl, but I thought I would write down some instructions that were a little more broken down.

French Breakfast Muffins

Makes 12 muffins

Dry Ingredients –

  • 1 1/2 cups flour
  • 3/4 cups sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon nutmeg

Wet Ingredients –

  • 1/2 cup milk
  • 1 egg, beaten
  • 1/3 cup melted butter

Topping* –

*As you can see my mom’s recipe does not have amounts for any of this, so I estimated these amounts.

  • 2-3 tablespoons melted butter (you may need more)
  • 1/4 cup sugar
  • 1/2 teaspoon ground cinnamon
  • splash of vanilla extract*

*We were out of vanilla so I did not use any and they were still delicious but I would suggest using it if you have it.

  1. Preheat oven to 400° Fahrenheit
  2. Grease muffin tin
  3. Combine dry ingredients in a medium mixing bowl and make a well in the middle of the mixture.
  4. Whisk together all of the wet ingredients.
  5. Pour the wet ingredients into the well and stir until combined being careful to not over mix batter. This batter is thicker than regular muffin batter so do not panic if it seems denser than you are used to.
  6. Bake for 18-20 minutes.
  7. While the muffins are baking mix 1/4 cup sugar and cinnamon together and melt the butter. Add a splash of vanilla extract to the melted butter if desired.
  8. Once the muffins have cooled enough to touch, dip the tops into the melted butter and then the cinnamon-sugar. Enjoy!
